Warm toast with butter, eggs seasoned with salt and pepper...what's not to love?

So, I was getting bored of just butter on toast. I wanted something quick, but also simple and filling. Then, I came across this reel on Instagram about a vegetable-packed omelet. This recipe definitely is not an omelet, but scrambled eggs is never a bad idea! I was not disappointed.


Scrambled Eggs + Spinach on Toast and Butter


Ingredients


  • 2 eggs

  • salt

  • pepper

  • 1-2 tbsp. olive oil

  • spinach

  • butter (vegan or regular)

  • 2 pieces of bread (your choice...I used whole wheat)

Directions


  1. Toast your bread

  2. Pour about 1-2 tbsp. of olive oil in a small pan and have your stove on at medium-high heat

  3. Scramble the eggs in the pan until ALMOST the consistency you want

  4. Season eggs with salt and pepper

  5. Add spinach to the pan, combining it with the eggs for about 2 minutes, then turn off the stove

  6. Assemble: Take out toasted bread -> spread butter on toast -> top with the cooked eggs + spinach -> serve
